Although you haven't said it, there is one possible difference that may be important to you - Travel. For website 'social events', image sizes aren't that big so there shouldn't be much difference between FF and crop unless you're shooting at really high ISO. For studio work presumably you have a lighting setup, so you shouldn't need to be using high ISO. Meanwhile, the advantages the 5DIII brings - such as dual card slots, tougher construction, and so forth - may not be advantages for the type of work you're doing. Also, like your 80D, it offers an articulated screen, which is missing on the 5DIII. (We've paired both 6D/60D bodies and 5DIII/7DII bodies for our work, and found both pairs quite capable.) The 6DII brings a little newer technology to the table, particularly its DPAF system for video and LiveView stills. But the 6DII and 80D are no slouches for pro-work, either. Both of the latter two cameras are more pro-oriented in their features. The 5DIII, on the other hand, is nearly identical in form to the 7DII. Why? Because the form factor is more similar to your 80D. In that case, I might suggest the 6DII over the 5DIII. If you simply WANT a full-frame camera, then just say so. Will your studio/social settings require good low light performance? And 'raw detail' is going to be more a function of resolution than sensor size. That easy to use app may help you in terms of your social events, including sharing pictures at events very quickly. getting focus using the larger screen of the iPad really helped. I also use the canon app on my phone and iPad, and that was very helpful when I took shots of the total eclipse on the 80D last year. I am also looking forward to taking it with me to a star party next month for night shots of the Milky Way. it was a very smooth transition control wise. I migrated to the 6DII from an 80D and 7D, since my main targets are my grandkids indoors, and they don't like a flash.

You are likely far more experienced than I am since you are using it for studio and for social events, yet I think the 6DII will be very similar in feel and function to the 80D, and that may help you overall.
